Carrot Cream Cheese Streusel Muffins

Happy Sunday everyone! 

Can ya'll believe that Easter is exactly one week from today? 

I honestly can't, it's sneaking up on me. I'm used to it being in April close to my birthday, this whole Easter being in March is throwing me off. 

I'm excited though.



I love any excuse to get together with your family and friends, eat a big meal, and just enjoy each others company. Those occasions don't happen nearly enough.

But that's why I love holidays. Not just you and your family are gathering together, but all over the world lots of families are gathering together. It's one day where the whole world just slows down a little bit from all the craziness that life brings, and everyone gives thanks to the ones around them. 

Or wants more than anything for the whole day to be over and they can go back to not seeing any of those people again until the next holiday! It goes both ways!



But whatever your stance on holiday gatherings is, food is almost always going to be a big deal at every household. So it's gotta be good.

These muffins are great for Easter morning or brunch to help put a smile to everyone's faces, including the ones that don't want to be there. 

Sweet and moist with a crunchy streuesel topping, these muffins will go fast!



Carrot Cream Cheese Streusel Muffins

(Recipe by Sarah Eats Austin)

Ingredients

3 cups flour
1 cup sugar
4 tsp baking powder
1 1/2 tsp cinnamon
dash of nutmeg
1/2 cup shredded carrots
2/3 cup milk
1/2 cup vegetable oil
2 large eggs, beaten
1 tsp vanilla extract
1/2 tsp almond extract

8 ounces cream cheese, room temperature
1 cup sugar

1/2 cup flour
1 cup sugar
1/4 cup butter, soft

Directions

Preheat oven to 375F.
Combine and mix first 6 ingredients in a large bowl. Combine the milk, oil, eggs, and extracts in another bowl and gently stir into the dry ingredients until combined.

In a separate bowl mix cream cheese and sugar, fold half of the cream cheese into the batter.
Pour into muffin tin lined with muffin liners. Place a dab of cream cheese on top of each muffin batter and press into batter. 

Combine all the ingredients for the streusel until it resembles crumbles. Liberally sprinkle mixture over each muffin. 

Place in oven and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
